Campfire Cooking – Barra Fish Cakes
The team at Aussie Campfire Kitchens know exactly how to make the tastiest barramundi fish cakes you’ll ever wrap your laughing gear around. Here’s how it’s done!
What you’ll need –
1 kilo cooked fish (we use meat from baked Barra wings)
3 x large potatoes (boiled & mashed)
1/4 cup milk
1/2 cup grated cheese
4 cloves garlic crushed
1 lemon rind
2 tbspn Dijon mustard
3 shallots finely sliced
4 eggs
salt and pepper to taste
breadcrumbs to coat fish cakes
oil for cooking (we use rice bran)
How It’s Done –
- Place the fish and potatoes into a large bowl and mash together well.
- Add the milk, cheese, garlic, rind, shallots, mustard, egg and salt/pepper, and stir well to combine.
- Shape fish mix with your hands to form a ball and coat with breadcrumbs.
- Put fish cakes into the fridge for 30 minutes to chill, this will help them to hold their shape.
- Heat enough oil to cover the BBQ pan base to shallow fry at a medium heat.
- Cook for 3 minutes before carefully flipping and cooking for a further 2 minutes or are browned to your liking!
