Campers’ Faux Pho
Here’s a fast and easy tribute to a classic Vietnamese favourite
Finely-sliced beef cooks in moments in this tasty campsite-friendly faux Pho that uses very few cooking resources, with half an hour on the stove and a full kettle to pour over the noodles. Commercially-available beef bone broth slashes hours from the cooking time.
While pre-preparing the spice bag saves space in your camp kitchen
Faux Pho base
1L bone broth
Cup of water
4 tbsp fish sauce
2 tbsp hoisin sauce
Juice from half a lime
500g beef, very finely sliced against the grain, to add at the end
Spice bag spice
● 4 star anise
● 2 sticks cinnamon
● 2 sticks of ginger
● 8 whole cloves
● 2 garlic clove, slice at camp
Noodles
Boiled water
200g flat Rice Noodles
Personal flair
Coriander, to taste
Mint, to taste
Sriracha to taste
Bean shoots and/or spring onions
1. On the stove add bone broth, add half a cup of water, fish sauce, hoisin sauce and the pre-packed spice bag to the pot. Try let it simmer for 20 minutes, adding extra water if has to boil
2. Add 200g flat rice noodles to a heat-proof bowl, add boiled water, cover, top up if required and let it sit for 20 minutes then drain
3. Remove hot spiced broth from heat. Add sliced beef and and mix till beef is cooked
4. In four bowls, divide noodles, spoon soup over the top
5. Add personal flair to taste
